BABY SPINACH(spinach harvested at an early stage)
Baby spinach is spinach harvested at an early stage of plant growth. The leaves are dark green, have a tender texture, are slightly bittery and have an earthy taste when compared to mature leaves. Nutritious and low in calories, these are a fave with chefs.

ROMAINE LETTUCE
Also known as coz lettuce, it crunchy, sturdy leaves has with firm ribs in the centre. Unlike most lettuces, it can tolerate heat. Start your meal with romaine lettuce salad to not only get bitter and succulent flavours, but also a bag full of nutrients. Wash and dry to remove excess moisture before storing in the refrigerator.

SWISS CHARD
Chard leaves are large, deep green in colour and are wrinkled. They must be cooked before eating. Though similar to beets, the stalk tastes a lot like celery. Mostly used in soups and salads, chards are loaded with nutrients.

ARUGULA
Also known as rocket leaves, these dark green and tender leaves have a pungent, peppery and slightly bitter, almost mustard-like taste. Arugula is a staple in many salads, soups, pizzas and pastas. This crunchy leaf is a great source of folic acid and vitamins A, C and K. It also packs in high levels of iron and copper.

LETTUCE ICEBERG
This is great for salads and sandwiches bec ause of its crispiness and mild taste. It is low in nutritional value when com pared to other green, leafy ve getables.
However, add these pale green leaves to your meal to make them more filling and less calorific.

LOLLO ROSSO
Native to Italy, this red loose leaf-type lettuce has a bold, slightly bitter and nutty flavour. This compact rosette of violet fan-shaped leaves, with a pale green base, has crisp, semi-succulent leaves, with a hardy texture and ruffled tips. They are high in vitamins A and C, folate and iron. This variety of lettuce also has 100 times more anti-oxidants than common lettuce.
