The dark green, very curly sprouts can reach up to 8 inches high when grown as micro greens, packed with nutrition and flavor. This is the classic “cress” of egg-and-cress sandwiches, a mainstay of British high tea, and it is also delicious as an addition to salads, vegetable dishes, and savories. Chop it and sprinkle atop hummus and other dips for a burst of heat!

A member of the watercress and mustard family, this herb is best grown in soil or other non-water media; it will not do well in a sprouting jar. Drop the seeds onto any soilless growing medium in a flat and they will sprout immediately and grow quickly.

Raw cress is 89% water, 6% carbohydrates (including 1% dietary fiber), 3% protein and less than 1% fat (table). In a 100 gram amount, raw cress supplies 32 calories and numerous nutrients in significant content, including vitamin K (516% of the Daily Value, DV), vitamin C (83% DV) and vitamin A (43% DV). Among dietary minerals, manganese levels are high (26% DV) while several others, including potassium and magnesium, are in moderate content (table).
